Beetroots have been proven to improve stamina, assist blood flow, help lower blood pressure and are packed full or vitamin C and iron. Hmm stamina and blood flow, does that ring a bell on common valentines day activities? And don’t worry if your flying solo this Valentines day (I am too) these brownies can still help you! Beetroot also contains betaine, which enhances the production of the body’s natural mood hormone seratonin. So munching on some beetroot can literally make you smile.

Seize the day
- 4 raw beetroots
- 3 eggs
- 4 medjool dates
- ¾ cup raw cacao
- 1 tsp organic baking powder
- ½ cup almond meal or sunflower seeds
- 1/2 cup walnuts, chopped
- 100mL melted coconut oil
- Preheat oven to 180C. Bring the beetroots to the boil in a pan of water with pinch of Himalayan salt for 15 – 20 minutes until soft. Chop beetroot into cubes and blitz in a food processor to a paste.
- Beat the eggs, in a mixing bowl until light and fluffy. Fold into the cacao, baking powder, almond meal/sunflower seeds and walnuts. Pour into 20 x 20xm baking tin, place some walnuts on top for visual appeal and bake for 25 mins. The brownies should be still slightly gooey in the middle. Allow to cool.
