Fatty Filled Frittata

I am constantly thinking up how my favourite nutrition packed foods can be combined and integrated into a meal to achieve my optimal nutritional needs. This morning was no different. I wanted a high fatty breakfast that was going to help rebuild my hormones, was packed with vitamins, minerals and fibre, keep my full until midday, tasted good and was going to allow my body to tap into my lipid stores and not be on a glucose roller coaster! If you want all these bodily perks aswell try out my fatty filled frittata with Dukkah and avocado 🙂

1 teaspoon of extra virgin coconut oil
1 leaf of kale
1/2 zucchini
1 red onion
1 tomato
1 handful of spinach
1 tablespoon of dill
1 egg
1 avocado
Dukkah ( I chose goodies grains Moroccan Dukkah chilli blend)

Dukkah is a blend of herbs, spices and nuts often consisting of things like cumin, turmeric, Himalayan salt, black pepper, almonds, macadamia nuts, sesame seeds, coriander, chilli. It’s an amazing topping that gives punch and flavour to your meals, activating your metabolism and adding additional multiple nutritional value to meals


Heat a pan to low heat and melt coconut oil. Place all chopped up vegetables into pan, perhaps leaving spinach and dill until just before the egg. Crack an egg on top of vegetables in pan and mix through. Cook until egg whites can be seen. Remove from pan into bowl and serve with a whole avocado and dukkah blend dressing. Eat slowly bring grateful for the masterpiece you have created and yourself as an amazing human being!
