Zucchini, walnut, chia and choc pancakes

These pancakes are completely gluten, wheat, sugar and dairy free. Made from completely organic ingredients they provide numerous health benefits including essential fatty acids in the eggs, coconut oil, chia seeds and walnuts, antioxidant in cacao and protein in quinoa flour, slow release of insulin from cinnamon and enhancing good gut flora and bacteria in Born Cultured Coconut milk yoghurt.

If you can get your hands on Tao nutrition you will also pack in multiple vitamins from kale, beetroot and chlorella and increased energy and protein benefits from maca powder. They are so quick to make, plus keep me feeling full until late afternoon!

1/2 cup quinoa flour or coconut flour
1 teaspoon of cinnamon
1 teaspoon of nutmeg (optional)
1 1/2 tablespoons of Tao powder or cacao powder
1/4 cup of activated walnuts
1 tablespoon chia seeds
1 cup grated zucchini

2 free range eggs
1/2 cup of home made coconut milk ( made from the water and flesh of young coconut blended together)
1 teaspoon of melted coconut oil

Grease pan with 1 teaspoon of coconut oil, combine all wet ingredients together (eggs, milk, coconut oil) then sift in dry ingredients ( flour, tao, cinnamon, nutmeg, chia seeds, zucchini, walnuts). Pour mixture onto pan and cook for 1 minute each side!

If you feel like you need a bit more sweatiness add 1 tablespoon of rice malt syrup to your wet ingredients.

Serve with sprinkled Tao powder and Born Cultured Coconut Milk Yoghurt! Yummmmm
